Dominic and Derek are making polpettes. The boys are crazy excited that this day is here. Dom only makes them at this time of year. Derek is helping so he can learn how to do it. I am happy to let the magic unfold in the kitchen and just eat and enjoy when it's over. You know? I don't want to see what goes on behind the walls at the Magic Kingdom, just show me the magic and the wonder.
Polpettes is basically made of french bread you leave out and let get really stale (it's so sad to watch this step happen) then you soak the bread again (I know odd right?) then you add eggs, Parmesan cheese and parsley and garlic and sort of deep fry them. A heart attack in the palm of you hand but darn, darn good.
I'll show you when the first batch is done. The boys are helping and I am happy to let the magic unfold.
