Hey Fruit Cake

Does anyone have a good Fruit Cake Recipe?
Derek wants to try Fruit Cake. Thinking I might make one. My Aunt Kat use to make a good one and some zucchini bread thing and Lordy her pomegranate jelly. Man that was good stuff.
I am feeling adventerous how hard could it be? What do you think mom 4 phone calls for the pumpkin pie how about 6 or 7 for this?

I don't have a fruit cake recipe, but I've been thinking about baking too. I was going through my saved recipe and remembered this little beauty. I got it from a guy I use to work with:

PEANUT BUTTER UPS

1 Cup Butter or Margarine (I prefer Butter)
1 ½ Cups Peanut Butter
2 Cups Graham Cracker Crumbs
2 Cups Powdered Sugar
1 Cup Chocolate Chips
2 ¼ Tbs. Shortening (e.g., Crisco)

1 9 X 3 Pyrex Dish

Spread aluminum foil on the bottom of the dish (otherwise the mixture will stick to the bottom of the dish).

In 2 qt. Bowl, combine peanut butter and butter. Microwave on high setting about 2 minutes or until butter is melted. After stirring the peanut butter and butter together, mix the graham cracker crumbs and powdered sugar in until mixture is firm. Then press firmly into Pyrex dish.

In a small bowl, combine chocolate chips and shortening. Microwave for about 3 minutes or until chocolate chips are completely melted. Stir the mixture to make sure that it is properly blended. Then, simply pour the chocolate chip/shortening mixture over the peanut butter mixture and spread it out with a spatula.

When chocolate has hardened a bit (I usually throw it in the refrigerator for a few minutes—but not too long or the chocolate mixture will get too hard too cut cleanly), cut the mixture into squares. Refrigerate overnight and it’s ready to go!


You may want to experiment with the ingredient proportions. I like to double the amounts above and make extra-tall, extra-big squares.
